Pear Preserves

There is not much better than opening a jar of homemade pear preserves in the dead of winter. This simple recipe can be used with other fruit as well, just adjust the sugar and cooking time to taste. Do not rush the cooking time as this is what makes the syrup thick and breaks down the fruit to the correct consistency.

Ingredients

  • 18 C pears peeled and sliced
  • 3 C sugar or honey
  • juice of one lemon, or 3 tbsp lemon juice
  • 1 tsp spices such as cinnamon, nutmeg and/or allspice (optional)

Directions

  1. Wash, peel and slice pears. Combine pears, sugar (or honey) in a stock pot with lemon juice and bring to a low boil. Simmer uncovered for 3 hours, until mixture is thick and spreadable. About half of the liquid will be gone.
  2. Remove from heat and ladle into preheated jars, adjusting airbubbles out until 1/4 inch headspace is left. Wipe rims of the jars clean and screw on lids and bands.
  3. Allow to cool and seal on countertop, to gift or put into the refrigerator for immediate use.
  4. If storing long term, place jars into hot water bath, making sure that they are fully covered. Process for 10 minutes. Remove jars and cool.
